The Challenge
Our brief was to design and theme a functional kitchen with a restaurant to serve busy families quality food quickly. The from-scratch build needed to be overseen closely and all contractors, furniture suppliers, kitchen equipment and signage fitters would have to be tendered and sourced. Alongside this, lower skilled staff would have to be inducted and trained ahead of the restaurant opening to produce high-quality food at speed. All this in 4 months? Challenge accepted!
What We Did
Peppercorn managed the entire project from start to finish. Initially, we chose contractors that could build the restaurant and kitchen to specification, on budget. With bi-weekly progress and budget meetings, we ensured that the job stayed on track. The theming and interior design came from months of working closely with our concept designers, the Peter Rabbit team, signage production and unique furniture creators who managed to turn our ideas into a reality with one-off pieces and lighting reborn from retired farm equipment.
The menu was designed as a mid-range casual dining concept but tailored to cater for theme park volume and speed of service – something that we have extensive experience in. After much food development and taste profiling with the client and our in-house chefs, wholesome dishes were chosen that echoed the farm theme with a strong emphasis on British produce. The entire menu was designed to suit chefs of all abilities with custom made back-of-house specification sheets for quick reference.
All aspects of a new restaurant were well thought out down to every little detail, all kitchen equipment was sourced by us, from state-of-the-art, WiFi-operated rationale ovens to every instrument and piece of cutlery they could possibly need to open and to run a successful, profitable venture.
